GPXIN-29: Inconsistency in the Journey Stats available at each level

GPXIN-29 It's noted in the documentation that not all stats are available at each level of the journey heirachy (i.e, File, Track, Segment). Need to look at normalising the stats objects so that all relevant information is available at each level.
